Sweet Potato Pancakes

Ingredients
-2 3/4 cups all-purpose flour
-3/4 teaspoon salt
-6 tablespoons dark brown sugar
-3/4 teaspoon baking soda
-1 1/2 teaspoon baking powder
-3 cups buttermilk
-2 tablespoons salted butter, mashed
-4 sweet potatoes, baked and mashed
-2 tablespoons of honey
-1 1/2 teaspoons of ground cinnamon
-3/4 teaspoons of ground ginger
-additional butter for pan
Directions
1. Whisk together flour, salt, sugar, baking soda, and baking powder. Set aside.
2. In a separate bowl, whisk together buttermilk, eggs, and melted butter. Stir in sweet potato, honey, cinnamon, ginger, and mix well.
3. Add wet sweet potato mixture to the dry mix. Combine well, but don't over mix. Batter should still have lumps in it. If possbile, allow to sit for 30 minutes.
4. Heat skillet over medium heat and lightly coat pan in butter. Then add 1/3 cup at a time for each pancake. Flip pancakes when slightly browned on both sides and enjoy!
