Tofu Kale Pesto Sandwich

Ingredients for Vegan Kale Pesto

-3 Handfulls of Kale

-1/2 cup walnuts

-1 clove garlic

-3 tablespoons nutritional yeast

-5-6 tablespoons olive oil

-1/2 teaspoon Italian Spice mix 


-Black Pepper

Ingredients for Sandwiches

-7 oz Tofu

-1 small zucchini, cut into slices

-1 carrot, spiralized


-2 whole wheat buns


1. First Kale Pesto: Put all ingredients in food processor and blend until smooth. 

2. Cut tofu into thin stripes. In medium pan, heat olive oil and stir-fry the tofu for about 2-3 minutes on each side until brown and crispy. If desired add half teaspoon of soy sauce. Once tofu is done, set aside. 

3. Heat some more olive oil and cook zucchini slices for another 3 minutes. Season with salt, pepper, and Italian Seasoning. 

4. Cut sandwiches in half and generously coat with kale pesto. Add the letuce, tofu, carrots, and grilled zucchini!
