Tofu Tikka Masala

Ingredients
For the Marinade
- 1 package Old Capitol Food Company Tofu
- 1 lemon
- 1 cup plain Greek yogurt
- 6 garlic cloves, minced
- 1 tbsp. ginger, minced
- 1 tsp. salt
- 2 tsp. cumin
- 2 tsp. garam masala
- 2 tsp. paprika
For the Sauce
- 1 large onion, finely chopped
- 3½ cups tomato sauce, or crushed tomatoes
- 1 cup heavy cream, or dairy substitute of your choice
- 3 tbsp. oil
- 2 tbsp. ginger, minced
- 8 garlic cloves, minced
- 2 tsp. cumin
- 2 tsp. tumeric
- 2 tsp. coriander powder
- 2 tsp. paprika
- 2 tsp. chili powder
- 2 tsp. garam masala
- 1¼ cups water
- Fresh cilantro, chopped, to garnish
- Rice, to serve
- Naan bread, to serve
Directions
1. Remove tofu from packaging. No need to drain or press with Old Capitol Food Company tofu!
2. Slice tofu into bite-sized pieces.
3. Combine marinade ingredients in a bowl and then add tofu pieces.
4. Mix until evenly coated. Cover and refrigerate for at least one hour.
5. Preheat oven to 425°F.
6. Place marinated tofu pieces on bamboo skewers, then place them over a baking tray lined with parchment paper. Make sure there is space underneath the tofu to help distribute the heat evenly.
7. Bake for 15 minutes, until slightly dark brown on the edges.
8. Heat oil in a large pot over medium heat, add onions, ginger, and garlic and sauté until tender, but not browned.
8. Add spices for about 30 seconds to release their aromatics and flavor, stirring constantly.
9. Add tomato sauce and water, then bring to a boil and cook for approx. 5 minutes.
10. Pour in cream and mix in tofu, cooking for another 1-2 minutes.
11. Serve with rice and naan bread. Enjoy!
