Tomato Cantaloupe Salad

Ingredients
-1/2 cup thinly sliced cucumber
-1/2 cup cherry tomatoes
-1/4 medium red onion
-1 cantaloupe
-1 tbsp olive oil or avocado oil
-1 lime (juiced)
-1 tbsp maple syrup
-2 tbsp fresh mint
-Salt
-Pepper
Directions
1. Combine cucumber, tomato, and onion in bowl with olive oil, apple cider vineagar, salt, and pepper. Adjust based on taste preferences.
2. To prepare dressing add lime juice, maple syrup, and sea salt to a small mixing bowl. Then slowly stream in olive oil and adjust based on tast preferences
3. Add cantaloupe to a large serving bowl and coat with dressing. Then add in vegetable mixture.
4, Gently toss to combine and serve!
